Pancake Breakfast
All-you-can-eat pancakes when the maple sap starts to run — proceeds help build the Exhibition Barn.
When the sap starts running in the maple trees, it is pancake time in Freistadt.
The society’s Pancake Breakfast is held in late winter in the Trinity Freistadt gym/cafeteria (10729 W. Freistadt Rd.). The menu is simple and generous: all-you-can-eat pancakes with sausage, eggs, homemade desserts, coffee, milk, and orange juice.
It is a true community morning — neighbors, families, and friends of the society sharing a long breakfast at the tables while volunteers work the griddles.
Where the money goes
In recent years, all proceeds from the Pancake Breakfast have gone toward building the new Exhibition Barn on the historical grounds — so every stack of pancakes helps put up a timber frame. Read more on the Exhibition Barn campaign page.
The first settlers would approve: tapping the sugar maples in spring was one of the little luxuries that got them through their difficult first Wisconsin winter of 1839–40. Heinrich von Rohr alone made 100 wooden troughs for collecting sap.
